Don’t be intimidated when it comes to making wraps… it just takes a good recipe, attention and patience. They are well worth their weight in gold. I used to think of wraps as a neutral vessel. Much like my Wonder Bread eating days. To me, it had one job that was to hold my prize-winning sandwich ingredients together… but over time I have learned to incorporate flavors into the wrap so that it can add another layer of taste… not to compete but to compliment the inner ingredients. I better “wrap” this up so you can get busy in the kitchen. 🙂
Bell Pepper Rainbow Wrap (raw, vegan, nut, gluten-free)
Red bell peppers contain lycopene, a pigment that’s responsible for their vibrant color, and also acts as a powerful antioxidant, helping to guard your cells against harm from oxidative stress. To increase the lycopene, you can lightly cook them in olive oil.
This creation came about when I had some leftover ingredients in the fridge. I had some corn wraps already made up along with some leftover Not Tuna and presto! In the picture above I took the wraps and softened them but passing them under the faucet real quick like. I then wrapped it around a metal cone and placed it in the dehydrator for a few hours to create the cone shape. See the picture below. These were so fun to make. You could easily make this wrap without forming it into a cone. You could just roll it up as well. Use your touch of creativity!

If your wraps get to dry while in the dehydrator, just run them under the water faucet for second and then dab with a paper towel. This will help soften them so you can roll up your favorite ingredients inside.
