These creamy and insanely decadent brownies have a fudgy top that makes for a perfect Christmas dessert. Making them takes less than an hour and you don’t have to keep an eye on the oven as this requires no baking. The brownies you can make from dates, walnuts, cocoa powder, and powder coffee beans and they do not contain eggs, butter — the usual ingredients for brownies. “It is a super healthy brownie recipe and depending on the guests, you can add additional raw cacao, coffee or infuse a new flavor with orange or lemon zest, vanilla bean, cayenne or chili powder. Instead of walnuts, almonds and hazelnuts can be used,” says vegan chef Vinita Contractor who created this recipe for Café Garde Manger.

Ingredients
(For the brownie)
• Raw walnuts……………………… 1/3 cup
• Raw almonds, roughly chopped……………….. 1/5 cup
• Dates, deseeds ………………….. 1/2cup
• Cocoa powder …………………… 1/8 cup
• Finely ground coffee or instant coffee ………….. 1/4 tsp
• Pinch of salt
• A few walnut bits for topping

(For ganache)
• Dark chocolate, grated ……..50 gms
• Coconut milk or dark chocolate filling …………….2 tbsp

Method

Add the dates to the food processor and process until small bits remain.
Place walnuts and almonds in the mixer and process until finely ground. Add the cocoa powder, coffee powder, and salt. Pulse to combine. Add the date paste. Blend until a dough consistency is achieved.
Add the brownie mixture to a small parchment lined tin and evenly distribute, and then press down until it is flat and firm. Place in freezer or fridge to chill before cutting.
Double boil grated chocolate; add the coconut milk and blend well till combined. After cooling spread it on to the brownies. Top with walnut bits and dust with cocoa powder.
It can be preserved in the fridge in an airtight container for two weeks and in the freezer for two months.
